Winemaking: The grapes are harvested by hand. After a few hours of cold maceration, the destemmed bunches undergo a soft pressing. The must produced ferments in stainless steel tanks with selected yeasts at a controlled temperature between 12-14° C. Subsequently the wine stays in stainless steel tanks, for about 4 months on fine lees, to refine its organoleptic characteristics before being bottled.
Organoleptic properties: Crystalline, straw yellow with greenish reflections. As for the sense of smell, it has intense fresh and fruity aromas with intense notes of tropical fruits, apple, peach, citrus fruits, melon, kiwi and naunces of floral odors. On the palate it is a fresh and savory wine, with delicate notes of citrus and yellow pulp fruit.
Pairing: Excellent as an aperitif, it accompanies first courses, soups and cuisine based on fish in general, mozzarella di buffala and pizza.
